
Things needed:

Steak of choice
-
2-3 Tablespoons of butter
-
3 Sprigs of Thyme
-
Sea Salt
-
Pepper (Preferably from mill)
-
1 Shallot
-
Cast Iron Skillet
-
Olive oil
Step 1:
Pat dry any moisture on steak and let stand 30 minutes at room temperature.
Step 2:
Season steak with salt and pepper evenly over both sides (massage in to make sure that flavor gets down into the meat).
Step 3:
Heat a large cast-iron skillet over high heat. Add oil to pan; swirl to coat pan . Add steak to pan; cook 3-5 minutes on each side or until browned.
Step 4:
Reduce heat to medium-low; add butter, thyme, shallot, and garlic to pan. Tilt pan around so butter spreads evenly. Then toward you so the butter pools. Cook for a few minutes, basting steak with butter every few seconds.
Step 5:
Remove steak from pan; cover loosely with foil and let stand 10 minutes to rest. **Reserve butter mixture. You’ll place this over the steak when serving.
Step 6:
Remove steak from foil, discard thyme, keep shallots and garlic to top steak with (thats what I do). Then spoon desired amount of butter mixture over the steak and enjoy!
